If you’re looking to ramp up your grilling game, and are ready to impress with some tasty new recipes, look no further.

Our friends at Samba Fire & BBQ have plenty of inspiration for delicious meals you can create using your Milkcan firepit, compatible grill and skewers. Are you ready to cook up a storm?

Herb Chicken Skewers

Ingredients:

  • 500g minced chicken
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg, beaten
  • Skewers

Method:

  1. Light up the grill and then soak the skewers in water for at least 30 minutes to prevent burning (alternatively, why not try our reusable stainless steel skewers and you can skip this step!)
  2. In a large mixing bowl, combine the minced chicken, chopped dill, chopped parsley, minced garlic, salt, black pepper, and beaten egg. Mix well to combine.
  3. Divide the mixture into equal portions and form them into long, thin sausage-like shapes around each skewer.
  4. Place the skewers on the grill and cook for 5-6 minutes on each side, or until the chicken is fully cooked and golden brown.
  5. Serve hot with your favourite dipping sauce and enjoy!

Grilled Prawns and Mango Lettuce Cups

Ingredients:

  • 300 g prawns (approx. 14 cleaned, deveined prawns)
  • 1 large iceberg lettuce
  • 1 mango
  • 1 avocado
  • 1 lebanese cucumber
  • 1 birdseye chilli
  • 2 tbsp diced red capsicum
  • 1 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • BBQ Rub
  • Salt and pepper to taste

Method:

  1. Peel some outer layers of the iceberg lettuce and discard until you can get crisp and large sized lettuce leaves you can hold in your hand. Peel four large leaves from the base of the lettuce and set aside.
  2. Dice mango, avocado and cucumber into 1cm cubes. Finely dice red capsicum and chilli and place everything in a bowl. Drizzle oil, vinegar and season with salt and pepper. Stir ingredients in the bowl to combine.
  3. Skewer prawns according to the size of your skewers. Dust generously with BBQ rub on both sides. Pat down the skewers so rub adheres.
  4. Grill skewers for 3 minutes on each side. Rest while you fill the lettuce cups. Generously spoon some salad mixture from the bowl into each lettuce cup. Serve with skewers on the side.

Jalapeno Poppers 

Ingredients:

  • 10 Jalapenos
  • 250 grams cream cheese
  • Half an onion finely diced
  • Handful of chives
  • 250 grams of streaky bacon for wrapping

Method:

  1. Finely dice the onion and gently fry with a splash of oil.
  2. While the onion is frying, halve and de-seed the jalapenos.
  3. Take the onion off the heat once browned and allow to cool for a few minutes.
  4. Mix the onion, finely chopped chives & cream cheese in a bowl. Now it’s time to stuff those jalapenos!
  5. Smear the cream cheese mixture into both halves of each jalapeno then place both halves back together. Wrap the stuffed jalapeno with a strip of streaky bacon and carefully slide onto a long metal skewer. Continue this process until you have used all the jalapenos.
  6. Place the skewers onto a hot grill and let it sizzle away for around 5 minutes on each side. Garnish with some fresh lime and coriander and tuck in.
